Must-Have Summer Cocktails

Summer is officially here and what better way to kick it off than with a refreshing cocktail? We checked in with a few of our favorite bartenders to find out what they’re mixing up this summer, and came up with a boozy bucket list of fun Siskiyou sippers. Go for it – try them all!


The Rex Club (Yreka)

The Rex Club and Empire Room is a notable bar, restaurant and entertainment venue located on Historic Miner Street in Yreka. Award-winning bartender Elizabeth Sherman has come up with this light and refreshing cocktail that she says is “herbal and crisp like the perfect lavender lemonade for the hot summer days of Siskiyou.”

Lavender Fields Forever

  • 1.5oz Crater Lake Vodka
  • .5oz St. Germain
  • 3 dashes Scrappy’s Lavender Bitters
  • .5oz simple syrup
  • 3 slices cucumber
  • 1/2 lemon
  • Garnish: cucumber ribbon and sprinkle of dried organic lavender

The Tree House Restaurant and Cooper’s Bar & Grill (Mt. Shasta)

In Mount Shasta at the Best Western Plus Tree House, you’ll find two tasty watering holes that come with an entire summer menu of classic cocktails. But the cocktail bartender Sherry White recommends for a super refreshing summer sipper is this take on peach tea:

Ginger Peach Tea

  • Vodka
  • Ginger Liqueur
  • Peach Schnapps
  • Iced tea

Watsons Vets Club (Mount Shasta)

Watsons Vets Club was built in 1896 and is the oldest bar in Mount Shasta. This ever-popular joint “where everyone’s welcome” features live music and variety of spirits. From owner Kris Watson comes one of his favorite and most popular summer sippers, his festive take on a white Russian, shaken and served over ice.

Screw Putin

  • 4 oz of Screwball Peanut Butter Whiskey
  • 4oz of Kahula
  • 4oz of Half and Half

Axe & Rose Public House (McCloud)

Located at the north end of the McCloud Historic District, the Axe & Rose Public House offers a full bar and traditional pub style menu. From their bartender Daniel Endoso comes this refreshing citrus-forward summer cocktail with a spicy kick:

Siskiyou Sunshine

  • Fill a tall highball glass with ice
  • 1 1/2 oz Absolut Mandarin Vodka
  • 1 1/2 oz Fresh Squeezed Orange Juice
  • Top off with lemon-lime soda and
  • a float of Fire Ball
  • garnish with a sliced orange wheel

Denny Bar Co. (Etna)

The first craft distillery restaurant and bar in Northern California, the Denny Bar Co. has its own portfolio of spirits and regularly creates new and innovative cocktail menus. But this summer, bartender Drew Hurlimann says this drink is his go-to for something light, crisp and refreshing, and brings out the best of Denny Bar Company’s Laust Sparrow Gin.

Meadowlark on the rocks

  • Muddled lime & cilantro
  • lime juice
  • coriander simple syrup
  • pineapple
  • Laust Sparrow gin

The Railroad Park Resort (Dunsmuir)

Dunsmuir’s Railroad Park Resort captures the romantic days of railroading with a beautiful restaurant and bar nestled in an antique dining car. From bartender Nicole Edwards comes this train town favorite that’s always super refreshing on a hot summer day:

Golden Spike:

  • 1 shot (part) crown apple
  • 1 part ginger ale
  • 1 part club soda
  • 1 honey stick with the top cut off.
